Dhokla | How to Make Soft and Spongy Dho

hokla is a Gujarati recipe prepared with gram flour. This is delicious and easy to digest and can be enjoyed for breakfast, lunch. This recipe also makes for a perfect healthy snack option, it can be prepared using easily available ingredients.


Ingredients to Make Dhokla Batter

Gram flour -1 cup

Sugar- 1/2 tsp

Salt - 1/2 tsp

Turmeric powder- 1/2 tsp

Eno fruit salt -1 tsp

Water

 

Ingredients to Make Dhokla Syrup

Oil

Mustard seeds- 1/2 tsp

Green chili – 5 piece

Curry Leaves

Water 1/2 CUP

Coriander Leaves Chopped

Juice of 1/2 Lemon

Method

In a bowl, add the gram flour, add 1 tsp sugar, 1/2 tsp salt, turmeric powder mix everything well

Add water and mix well

Whisk everything well, the batter should be of flowing consistency and not very thick.

Rest the batter for about 10 min s

Grease a cake tin with some oil

Heat a pressure cooker/ pot with some water

Place a stand inside and let the water come to a boil

Just before pouring the batter into the cake tin, add eno fruit salt and mix it gently

Pour the batter immediately into the cake tin

Place the cake tin

Close and steam cook the dhokla for about 25-30 mins on medium flame

Heat a pan with some oil, add mustard seeds and let it splutter

Add green chilies, and curry leaves

After few mins, pour water, add salt, sugar

Bring it to a boil and turn off the stove

Add lemon juice, coriander leaves and stir well

Check the dhokla and let it come to room temperature

Take the dhokla from the cake tin and cut it into squares

Pour the tempered ingredients onto the dhokla

Let the dhokla soak in the tempering

Finally garnish it with grated coconut and coriander leaves

The dhokla is ready to be served.

To Make Masala Paste
Coriander Seeds - 1 Tbsp

Fennel Seeds - 1 Tsp

Cinnamon
Clove
Red Chilli - 8 Nos
Oil - 2 Tsp
Onion - 2 Nos Chopped
Garlic & Ginger
Tamarind
Grated Coconut - 2 Tbsp
Turmeric Powder - 1/4 Tsp
Rock Salt - 1/2 Tsp
Water

Method:
1. Dry-roast coriander seeds, cumin seeds, fennel seeds, whole peppercorns,  cinnamon and cloves.
2. Dry-roast the red chillies.
3. Add oil, onions, ginger, and garlic; fry a little. Add tamarind after. Fry till ingredients are golden-brown.
4. Grind the dry-roasted ingredients first. Add the fried ingredients after. Add turmeric powder, salt and grind all of it. You can add some water while grinding. Grind to a paste.
5. To cook the chicken - add coconut/cooking oil add onions, green chilies, curry leaves. Once the onions are sauteed, add the chicken pieces. Mix them together.
6. Add the ground paste to the chicken, and mix.
7. Add water and continue to mix till the paste has coated all the pieces of chicken.
8. Season with salt, pour water, cover the sauce-pan and slow cook the chicken 20 minutes. Open and cook till water is completely evaporated.
9. Garnish with fresh curry leaves and serve hot

Bread Gulab Jamun

3 One Pot Recipes | Rajma pulao | Paneer pulao | Veg biryani

Paneer Pulao

Ingredients
Paneer - 200 gms
Basmati rice - 1 cup ( soaked )
Onions - 2 nos ( thinly sliced )
Cumin seeds - 1/2 tsp
Carrots - 1 cup
Beans - 1 cup
Peas - 1 cup
Green chilli - 2 nos
Garam masala - 1 tsp
Oil - 2 tbsp
Ghee - 2 Tsp
Mint leaves
Coriander leaves
Bay leaf
Cardamom
Cloves
Pepper
Cinnamon
Water
Salt
Method
1.Fry the paneer pieces till they are golden brown in color
2.Soak the basmati rice for about 30 minutes
3.Heat a pressure cooker with some oil and ghee, roast the whole spices
4.Add onions and green chilies and fry them till they are golden brown in color
5.Add the vegetables and saute them
6.Add mint leaves and coriander leaves and saute them
7.Add garam masala, lemon juice, and the fried paneer pieces  and  mix well
8.Add the soaked basmati rice and add enough water and pressure cook it for one whistle
9.Serve it hot with onion raita

Rajma Pulao
Ingredients
Rajma - 200 gms (soaked overnight)
Water
Ghee - 3 Tsp
Whole spices
(Cinnamon, Clove, Cardamom, Star Anise, Mace & Bay leaf)
Onion - 2 nos thinly sliced
Green Chili - 3 nos slit
Ginger garlic paste -1 Tsp
Tomato - 2 nos chopped
Salt to taste
Turmeric powder - 1/4 Tsp
Chili powder - 2 Tsp
Garam masala - 1/2 Tsp
Juice of 1 lemon
Coriander leaves
Water - 3/4 cup
Basmati Rice - 1 cup (soaked 15 mins)
Method
Soak the rajma overnight
Pressure cook the rajma for 4-5 whistles
Soak the basmati rice for 15 mins
In a pressure cooker, add ghee, add the whole spices and roast them
Add onions, green chilies and saute them
Add ginger garlic paste and saute
Add tomatoes and saute
Add red chili powder, turmeric powder, salt and mix well
Add the cooked rajma beans
Add 1/2 tsp of garam masala, lemon juice, coriander leaves and mix everything well
Add a cup of cooked rajma beans water, add 3/4th cup of fresh water
Add soaked basmati rice  and mix well
Pressure cook for 2 whistles on medium flame
Serve the Rajma Pulao hot with some raita

Onion - 2 Nos Chopped
Ground Masala Paste
Oil - 2 Tsp
Tomato - 2 Nos Chopped
Turmeric Powder - 1/4 Tsp
Salt
Curd - 1/4 Cup
Potato - 1 No. Large
Carrot - 1 No. Chopped
Beans - 7 Nos
Cauliflower
Green Peas - 1/4 Cup
Few Mint Leaves
Few Coriander Leaves
Water - 2 Cups
For Masala Paste
Kashmiri Red Chili - 3 Nos
Green Chili - 2 Nos
Garlic - 3 Cloves
A Piece of Ginger
Chopped Onion - 2 Tsp
Few Mint Leaves
Few Coriander Leaves

Method
1. Wash 1 cup (250 ml) of long grain basmati rice and soak it in water for about 15 min.
2. After 15 min, drain the water and keep it aside.
3. For masala paste - add 3 Kashmiri red chili,2 green chilis, 3 cloves of garlic, a piece of ginger, 2 spoons of chopped onions, a few mint & coriander leaves & finally add some required water and grind it to a fine paste.
4. Heat the pressure cooker, add 3 spoons of ghee, few spices like 1 cinnamon, 3 cardamom pods, 1-star anise, a piece of mace, few cloves, 1 bay leaf, a small piece of stone flower(optional).
5. Now add 2 finely chopped onions, sort the onions till it turns to nice golden colour and add the ground masala paste. Cook until the raw smell vaporizes.
6. Add 2 spoon of oil, only if the gravy is dry.
7. Add 2 numbers of chopped tomatoes and cook until it mashes.
8. Masalas to be added – ¼ tsp of turmeric powder, salt as required and add ¼ cup of thickening curd.
9. Veggies to be chopped and added – 1 large potato, 1 carrot, 7 beans, 1 bowl of cauliflower and ¼ cup fresh peas. Mix & cook the ingredient for about 5 min.
10. For flavor add some mint and coriander leaves.
11. Finally, add the soaked basmati rice and 2 cups of water for it to cook. (add salt as needed)
12. Now pressure cook the biriyani for 2 whistles in medium heat.
13. Turn off the stove and let the pressure cooker for about 15 min.
14. You can now serve the delicious veg biriyani with your choice of raita or onion salad. HAPPY FOODING!!!!

Mango Falooda
Ingredients
Sabja/Basil Seeds - 2 Tbsp
Water
Vermicelli - 1/4 cup
Mango - 1 cup
Rose syrup - 2 Tbsp
Milk - 1/4 cup
Mango ice cream
Mixed nuts
Method:
1. Soak sabja/basil seeds in water.
2. Cooking Vermicelli: Once the water is boiling add the vermicelli and cook it.
3. Once the vermicelli is cooked strain it and keep aside.
4. Cut the mango into pieces and grind to a puree.
5. In a tall glass, pour rose syrup, soaked sabja/basil seeds, cooked vermicelli, mango puree, milk, mango ice cream, chopped mango pieces and mixed nuts.
6. Mango Falooda is ready, serve it immediately.

Fresh Fruits Popsicle
Ingedients
Strawberry - 2 nos
Mango - 1 no
Kiwi - 2 nos
Blue Berry - 8 nos
Tender Coconut Water - 1 cup
Honey - 2 tsp
Method
1. Cut the fruits into bite sized pieces
2. Mix 2 tablespoons of honey with 1 cup of tender coconut water
3. Fill in the popsicle moulds with the fruits and pour in the tender coconut and honey water
4. Freeze the popsicles for about 6-8 hours
5. Fresh fruits popsicles are ready and can be had as a snack or a dessert.

Ingredients
Badam Pisin/Almond Gum
Nannari Syrup 
Thick Milk
Chilled Milk
Jigarthanda Ice Cream 
For Caramel Syrup
Sugar - 1 cup
Water
For Jigarthanda Ice Cream
Milk - 1 liter
Unsweetened Khoya - 100 gms
Sugar - 3/4 cup
Corn flour - 2 Tsp
Milk - 1 Tbsp
Caramel syrup - 2 Tbsp
Fresh cream - 200 ml
Method
Soak the badam pisin or almond gum in some water overnight
Heat a pan and add sugar and wait till it completely melts
Once most of the sugar is melted, add some water and stir it well
Turn off the stove and let it cool
Next, boil the milk and stir it at intervals
After about 20 minutes, add khoya and mix well for the khoya to dissolve
Once the khoya is dissolved completely and the milk has thickened, take some of it and keep it aside in a bowl
Add sugar to the milk and mix well
Mix cornflour and milk and make a slurry and add it to the milk
Next, add the caramel syrup and mix well
Add fresh cream and mix it well
Turn off the stove and cool it completely
Pour it in a container and freeze it overnight, this is your jigarthanda icecream
To make the Jigarthanda, take a tall glass, add some badam pisin, add some nanari syrup, thick creamy milk, plain milk, finally add the jigarthanda icecream

Salt

To Make Masala Powder
Coriander Seeds - 1 Tbsp
Cumin Seeds - 1 Tbsp
Fennel Seeds - 1 Tsp
Kalonji Seeds - 1/2 Tsp
Fenugreek - 1/4 Tsp
Amchur Powder - 1 Tbsp
Chili Powder - 2 Tsp
Turmeric Powder - 1/2 Tsp
Asafoetida Powder - 1/2 Tsp

To Make Filling
Mustard Oil - 1 Tbsp
Onion - 2 Nos Finely Chopped
Ginger Garlic Paste - 1/2 Tsp
Ground Masala Powder - 3 Tbsp
Salt - 1/2 Tsp
Sugar - 1 Tsp

Method:
Dry roast all the ingredients for the masala powder, except  the spice powders
Cool the ingredients and transfer them to a mixer jar
Add the spice powders to the mixer and grind it to a fine powder
Remove the seeds of the bitter gourds, rub salt all over the bitter gourds
Let it sit for 20 mins

Method

1. Dabeli Spice Mix
2. Heat a pan, add coriander seeds, cumin seeds, cinnamon sticks, cloves, dry red chilies, and dry roast them till fragrant
3. Let it cool to room temperature
4. Grind these spices to a fine powder

Chilli Garlic Chutney
1. Soak the red chilis for about 20 mins
2. To a mixer jar, add the soaked red chilies, garlic, and salt and grind it to a smooth paste by adding some water 
2. Add some water to get a thin sauce

Potato filling
1. Heat a pan with some oil and add in the Dabeli spice mix and saute it
2. Add boiled and mashed potatoes and mix it well
3. Add salt, water and mix well
4. Cook it for 5 mins and transfer it to a plate and flatten it
5. Garnish with coconut shavings, tutti frutti, coriander leaves, and pomegranate seeds.

To assemble the Dabeli
1. slice the pav to create a cavity
2. Stuff this cavity with sweet tamarind chutney, chili garlic chutney, mashed potatoes mix, onions and roasted peanuts in layers 
3. Heat a pan and toast the Dabeli with butter till crisp on both the sides.
4. Dip the hot Dabeli it into the Sev and serve

To Make Palak Paneer

Kashmiri Chili Powder - 1 Tsp

Garam Masala - 1 Tsp
Water - 1 Cup
Salt - 1 Tsp
Paneer - 200 Gms

Method:
Boil a pot of water
Add the palak leaves to the boiling water
Let it boil for 2 to 3 mins and strain the palak leaves and keep it aside
Heat a pan with some butter, add cumin seeds and roast them
Add onions,  green chilies,ginger, garlic and saute them
Add tomatoes and cook well
Cool the mixture and add it to a mixer jar
Add the palak leaves along with the onion, tomato mixture and grind everything together
Heat the same pan with some butter, add all the spice powders and saute
Add the ground mixture, add some water, salt and let it come to a boil
After about 5 mins, add the paneer pieces and close and cook it for another 5 mins
Garnish it with fresh cream and serve hot.

Method
For the noodles to cook – take a pan, add enough water, add some salt as required and now add noodles
Once its 90% cooked take it off the flame and strain it, add some oil so that it won't stick to each other.
Take a bowl, mix all the sauces together and keep it aside
Take a pan, add oil, some finely chopped ginger and garlic, sliced onions, capsicum and saute
Now start off with adding the vegetables and stir fry them
Add salt and pepper and mix well
Add the cooked noodles and stir fry them
Then add the sauce mixture and toss it all together 
Finally, garnish it with some spring onions greens

To Make Masala Dosa
Dosa Batter

Potato Masala

Method
In a bowl, wash and soak idli rice and parboiled rice for about 3 hours
In another bowl, wash and soak urad dal, fenugreek seeds, chana dal for about 3 hours
In another bowl, wash and soak poha for about 3 hours
First grind the rice without any water and later add very little water
Add the dals and grind it
Finally add the poha and grind it into a smooth batter
Add rock salt and mix well
Let the batter ferment for about 8 hours
To make the red chutney, heat a pan with some oil roast cumin seeds, chana dal
Add onions, garlic, red chili and saute them
Cool the mixture and add salt and grind it to a fine paste
Boil the potatoes and peel the skin 
To make the potato masala, heat a pan with some oil, add mustard seeds, urad dal, cumin seeds
After the mustard seeds splutter, add asafoetida, onions, green chilies, curry leaves and saute
After sauteing the onions, add turmeric powder, salt and boiled potatoes
Mix everything well and mash them roughly
Finally add some coriander leaves and turn off the stove and keep the mixture aside
Heat a tawa, pour the dosa batter and spread it
Add oil, cook on both sides and spread the red chutney, spread the potato masala
Fold the dosa and serve it hot.

Ingredients:

Butter
Pav Bun

For Egg Bhurji:
Oil - 2 Tsp
Onion - 1 no. chopped
Green chilli - 1 no. finely chopped
Ginger garlic paste - 1 Tsp
Tomato - 2 nos chopped
Salt to taste
Turmeric powder - 1/2 Tsp
Chilli powder - 1 Tsp
Pav Bhaji Masala - 2 Tsp
Egg - 6 nos
Chopped Coriander leaves

Method:
Take a wide saucepan and add some oil.
Add the chopped onions, green chilli and sauté well.
Add the ginger-garlic paste, chopped tomatoes, and mix.
Now, add the salt, turmeric powder, chilli powder, and Pav bhaji masala. Mix well.
Crack open 6 eggs in a small bowl and add them to the pan.
Smash the egg yolks and mix well. Keep mixing until all the moisture evaporates.
Now, add the chopped coriander leaves.
Your egg bhurji is ready.
Now, take a tawa, and spread enough butter on it.
Take a pav, open it up and place it over the butter on the tawa. Toast the pav from both sides.
Finally, remove the pav from the tawa, stuff the egg bhurji in the middle and serve hot!

Bread Omelette
Ingredients

Egg - 2 nos
Bread
Cheese slice
Chili powder - 1/2 tsp
Green chili
Chopped Onion - 2 to 3 Tsp
Chopped Coriander leaves
Oil
Salt
Pepper

For Coriander Mint Chutney
Coriander leaves
Green chili - 1 no.
Mint leaves
Juice of 1/2 Lemon
Salt

Method

Coriander Mint Chutney

Add coriander leaves, green chili, mint leaves, lemon and salt in a mixer jar
Grind this to a smooth thick paste
Your spicy green chutney is ready. Keep this aside.

Bread Omelette

In a bowl, add eggs, chili powder, salt, pepper, onions and green chili
Whisk it well till everything is mixed
Now, heat a pan and pour some oil
Pour in the egg mixture and spread it all over the pan
Place the bread slices on the omelette
Flip the omelette and let the bread slices toast
Flip it again and spread the spicy green chutney on one side of the bread
Place a cheese slice on top of it
Now, Fold the omelette inwards and fold the bread slices together.
Street food style Bread Omelette is ready to be served hot.

Chicken Nuggets
Ingredients

Boneless Chicken - 250 gms
Salt to taste
Pepper
Garlic powder - 1/4 Tsp
Breadcrumbs
Italian seasoning - 2 Tsp
Chili flakes - 2 Tsp (optional)
Egg - 1 no.
Oil for deep frying

Method
1. Take the boneless chicken pieces cut up into small pieces in a bowl
2. Add salt, ground pepper, garlic powder, and all-purpose flour to the chicken
3. Coat the chicken pieces with the spices and the all-purpose flour and keep it aside
4. To make the bread crumbs, toast the bread slices (you can use either white or brown bread) and let it cool
5. Cut the bread slices into small pieces and grind it to a coarse powder
6. Add some Italian seasoning and chili flakes in the breadcrumbs and mix them to make seasoned bread crumbs
7. Crack open an egg in a bowl and whisk it to make the egg wash
8. Take the flour coated chicken pieces and dip it into the egg wash and dip into the breadcrumbs and arrange all the breadcrumbs coated chicken pieces in a plate
9. Meanwhile, heat a kadai with some oil for deep frying
10. Once the oil is hot, slowly add the chicken pieces into the hot oil and deep fry them till you get a golden brown color throughout
11. Serve the chicken nuggets hot with some ketchup and mayo by the side.

Method:
In a bowl, juice the lemons
Add honey, lemon zest and mix everything
Add enough water and mix well

Pour the lemon juice mixture into popsicle moulds and freeze it overnight
Cut watermelon into small pieces
Add them to a mixer jar, add sugar according to your taste
Grind it
Strain the watermelon juice and pour the watermelon juice into popsicle moulds
Add few pomegranate seeds
Freeze the popsicles
Peel and chop mangoes into small pieces
In a mixer jar, blend mangoes and sugar together
Freeze it overnight
Take the popsicle moulds out and leave it for 2 to 3 mins

Mix them well
After the gram flour to it and mix well
Cook till the besan flour starts turning golden in color
